CHEEKY Chicken Piri-Piri Wraps

Making your own flatbreads on the grill is so unbelievably simple anyone can do it and it will spoil shop bought ones for you in the future. They will be highlight of the meal along with burning/charing lettuce which is a top drawer tip to grilling greatness"

Ingredients

 Serves 4

  • 4 Boneless chicken thighs
  • 1 Jar Piri Piri Sauce (use FSF home-made if possible)
  • 2 Garlic cloves
  • 1cm Ginger
  • Small bunch coriander
  • 1 Shallot
  • 1 Lemon
  • Salt and pepper to taste
  • 1tsp Olive oil
  • 200g Thick yogurt
  • 4 big Ripe tomatoes
  • 1tbsp Sherry vinegar
  • 2tbsp Olive oil
  • 1 Red onion
  • 4tbsp Red wine vinegar
  • 4tbsp Caster sugar
  • 2 Little gem lettuces
  • 320g Strong white flour
  • 200g Water
  • 1tsp Dried yeast

method

In a small bowl mix the crushed garlic, ginger, chopped shallot and coriander with the piripiri sauce. Add a squeeze of lemon and olive oil. Season and mix. Add the chicken thighs and marinade overnight if possible.

Make the flat bread dough. Mix the flour, yeast, salt together. Add the water and knead the dough until it is stretchy and soft. Around 10mins. Put to one side to rest.

Mix the yogurt with some piripiri sauce to your desired spiciness. Chop the tomatoes into medium chunks and mix with the vinegar, olive oil and salt and pepper. Leave to marinade for a few hours. 

Thinly slice the red onions. Salt heavily and leave for 15mins. Wash the salt off and drain. Add the vinegar and sugar. Mix and leave to pickle.

Heat your bbq. Grill the chicken thighs until crispy and cooked through. Cut the baby gem into 1/4s but still on the root. Season and lightly oil. Grill on the bbq until lightly charred. Divide the dough into 4 pieces. On a floured surface roll into thin flat breads. Place directly on the grill and cook for a few mins either side until done.

When everything is ready. Slice the chicken up into strips. Spread some yogurt over the flat bread, add the chicken, grilled lettuce and tomatoes. Top with some pickled onions. Add some extra Piri Piri and eat immediately.
